Sweet, Salty, Seedy, Coconutty Granola + Mango Lassi Smoothie Bowls

Currently, my mission is to inject as many “vacation-esque” vibes into our daily life as humanly possible. I have several inflatable pools saved in my Amazon cart, but have yet to pull the trigger as the thought of a Texas bug slowly floating towards me is enough to make me never go near water again (Actually think I just fully talked myself out of it with that). Instead of quelling my itch for poolside lounge fare in the poofy arms of what can only be classified as a child’s toy, I should really just whip up a mango lassi smoothie bowl and a batch of this granola because it 100% tastes like it’s meant to be consumed near crystal blue waters. How’s THAT for a segue?

Today’s we’re talking not 1, but 2 recipes from my new book (Did ya hear? You can pre-order it now!). First off- we have one of my favorite granolas ever (Was a hippie-er sentence ever said?). As its namesake states, it’s sweet, salty, seedy, coconutty, and delivers on the large clusters that- I’ll speak for the masses here- I think we all want from our ideal granola (If not, may I point you in the direction of my slightly more drab friend, muesli?). It’s so light, crisp, and perfectly caramelized. It’s so delicious on top of this smoothie bowl, but hot tip, throw it on some ice cream or pancakes…You’re gonna like the way you look, I guarantee it (Men’s warehouse? Ew.).

Then, there’s the mango lassi smoothie. Perfectly fluffy, and bursting with mango from the addition of both fresh and frozen slices, punchy and tropical from the hit of pineapple- it’s delicious on its own, but the addition of the sweet, crunchy coconut-infused granola perfectly drives home the “vacation-esque-ness” of it all. Let’s get into it, but this one is so fast, it will be over before it began!

I hope this makes its way into your b’fast repertoire! Frankly, I wanted to share this because with how busy things have been, this recipe has been fully saving my ass this week from afternoon hanger! Tip: Double that batch of granola. Your future self will thank you.

As we are nearing the end of the week, I feel like my brain is playing catch-up and processing. I don’t want to be a broken record of gratitude (haha), but I just want to say how every single text, dm, comment, call, email, singing telegram, WHAT HAVE YOU, about my book has really seeped into the farthest reaches of my heart. As a habitual over-thinker and overly-self-critical person it just really fills me up to know that someone might be enjoying my recipes. I am so damn excited to keep sharing more. Beyond that, there are so many recipes for this blog I just have plain ‘ol backlogged because of the nature of the time and energy it takes to write a book, so, we’ve got some things cooking…lits and figs. So that’s all! That’s my excitement for the week. Well, that, and the fact that after THREE YEARS of being here, I’m FINALLY getting my office in gear. There’s a yellow chair involved and Ben is building me a desk. Can’t wait to share that, and frankly, I can’t wait to get to work somewhere other than my dining room, living room or kitchen. Can you tell I’m caffeinated?
